This week, I’ll be discussing a classic item of the British lunch menu: the Cornish pasty. These baked, pie-like snacks are closely associated with the South West of England but enjoy popularity throughout the British Isles. Typically, they consist of uncooked filling, often a combination of meat (typically beef) and vegetables (such as potatoes, swede, and onions). To qualify as an official Cornish pasty, it must contain at least 12.5% meat and 25% vegetables.

The preparation involves placing the filling at the center of a circle made from shortcrust pastry. The edges are then brought together and crimped to create a seal for baking. The origins of the word “pasty” date back to around 1300, stemming from the Medieval French word “paste,” which referred to a pie baked without a dish. Although the oldest known pasty recipe is from 1746, pasties started as a convenient lunch option for workers in the tin mines or clay pits, providing them with an easy yet substantial meal to take to work.

パスティとは、具材をパイ生地の円形に包んで、端をつまんで閉じて焼く、手で持って食べられる肉パイの一種です。パスティという言葉の起源は、1300年頃にさかのぼり、皿なしで焼くパイを意味する中世フランス語の”paste”に由来します。最古のパスティのレシピは1746年のものですが、パスティは鉱山や粘土採掘場で働く人々の便利な昼食として始まりました。パスティは、簡単に作れて栄養価の高い食事を提供してくれました。
